Chicken Caesar Salad Skewers (Printable)

# What You’ll Need:

→ Chicken

01 - 2 boneless, skinless chicken breasts (approximately 12 oz), cut into 1-inch cubes
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon salt
04 - 1/2 teaspoon freshly ground black pepper
05 - 1/2 teaspoon garlic powder

→ Salad

06 - 12 small romaine lettuce leaves, washed and dried

→ Croutons

07 - 12 large croutons (approximately 1-inch cubes), store-bought or homemade

→ Dressing

08 - 1/4 cup Caesar dressing, store-bought or homemade
09 - Freshly grated Parmesan cheese, optional for garnish

# How To Make:

01 - Heat a grill or grill pan over medium-high heat until hot.
02 - In a mixing bowl, combine chicken cubes with olive oil, salt, pepper, and garlic powder. Toss to coat evenly.
03 - Thread each chicken cube onto individual skewers. Grill for 3 to 4 minutes per side until cooked through and lightly charred. Allow to rest for 2 minutes.
04 - Layer each skewer by first adding a romaine leaf, followed by a grilled chicken cube, and finishing with a crouton.
05 - Arrange assembled skewers on a serving platter. Drizzle with Caesar dressing and optionally sprinkle with freshly grated Parmesan cheese. Serve immediately.

  • Don't skip letting the chicken rest after grilling, cutting into it too soon and all the moisture runs out onto the cutting board.
  • If you drizzle the dressing too early, the croutons turn into mush, wait until people are literally reaching for them.
  • Wooden skewers can splinter if they're cheap, I learned this the hard way when one broke in someone's hand.

  • Use metal skewers if you have them, they don't snap and you can reuse them forever.
  • If your grill is too hot and the outside of the chicken chars before the inside cooks, move the skewers to a cooler spot and close the lid for a minute.
  • A little squeeze of lemon juice over the top right before serving brightens everything up and cuts through the richness of the dressing.
