Ingredients
- Vegetables: 1 ½ lbs (700 g) Yukon Gold or red potatoes cut into 1-inch cubes, 1 large head broccoli (about 12 oz / 350 g) cut into florets, 4 cloves garlic minced
- Flavorings & Seasonings: 1 large lemon zested and juiced, 2 ½ tbsp olive oil, 1 ½ tsp smoked paprika, 1 tsp dried oregano, ¾ tsp fine sea salt, ½ tsp freshly ground black pepper
- Garnish (optional): 2 tbsp fresh parsley chopped, Lemon wedges
Instructions
- Preheat oven:
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Toss potatoes:
- In a large bowl toss the potato cubes with 1 ½ tbsp olive oil half the lemon zest half the lemon juice smoked paprika oregano salt pepper and half the minced garlic.
- Roast potatoes:
- Spread potatoes on the prepared baking sheet in a single layer. Roast for 20 minutes.
- Toss broccoli:
- Meanwhile toss broccoli florets with remaining olive oil lemon zest lemon juice and garlic in the bowl.
- Combine and roast:
- After 20 minutes remove potatoes from oven add broccoli to the baking sheet and toss gently to combine.
- Final roast:
- Return to oven and roast for another 15 minutes or until potatoes are golden and broccoli is tender and lightly charred.
- Serve:
- Transfer to a serving platter. Garnish with fresh parsley and extra lemon wedges if desired. Serve hot.
