09 - 1 cup packed dark brown sugar
10 - 1/4 cup unsulphured molasses
11 - 1 large egg, room temperature
12 - 1 teaspoon pure vanilla extract

→ For Rolling

13 - 1/4 cup granulated sugar

# How To Make:

01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together flour, ground ginger, cinnamon, cloves, nutmeg, baking soda, and salt until evenly mixed.
03 - In a large bowl, whisk melted butter, dark brown sugar, molasses, egg, and vanilla extract until smooth and homogenous.
04 - Gradually add the dry ingredient mixture to the wet mixture, stirring gently with a spatula until just combined. Avoid overmixing to maintain tenderness.
05 - Scoop the dough by heaping tablespoons and roll each portion into a ball. Coat each ball evenly in granulated sugar.
06 - Place the sugared dough balls 2 inches apart on the prepared baking sheets to allow for spreading during baking.
07 - Bake in the preheated oven for 9 to 11 minutes, until the cookies are puffed and just set but still soft in the center. Avoid overbaking.
08 - Allow cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
