  • Legumes: 2 cups dry brown or green lentils, rinsed and 6 cups vegetable broth
  • Vegetables: 1 large onion finely chopped, 2 medium carrots diced, 2 celery stalks diced, 3 cloves garlic minced, 1 large potato peeled and diced, 1 bay leaf
  • Fruits: 10 dried prunes pitted and halved
  • Spices & Seasonings: 1 teaspoon sweet smoked paprika, 1/2 teaspoon ground cumin, 1/2 teaspoon dried thyme, Salt and freshly ground black pepper to taste
  • Oils: 3 tablespoons olive oil
  • Garnish (optional): Chopped fresh parsley

Instructions

Step 1:
Heat olive oil in a large heavy pot over medium heat Add onion carrots and celery sauté for 5 minutes until softened
Step 2:
Stir in garlic and cook for 1 minute
Step 3:
Add the lentils potato bay leaf paprika cumin and thyme Cook for 1 minute stirring to coat
Step 4:
Pour in the vegetable broth and bring to a boil Reduce heat to low cover and simmer for 30 minutes
Step 5:
Add the prunes and continue simmering uncovered for another 20 25 minutes or until lentils and potatoes are tender and the stew has thickened
Step 6:
Season with salt and pepper to taste Remove bay leaf
Step 7:
Ladle into bowls and garnish with fresh parsley if desired Serve hot
