Featured in: Herbal Cozy Dinners

This warming bowl combines sweet carrots and earthy celeriac in a fragrant spiced broth, with just enough chilli to add gentle warmth. Ready in under an hour, it blends into a silky smooth soup that's naturally gut-friendly and packed with flavour.

The spices—cumin, coriander, turmeric and smoked paprika—create a warming depth that complements the root vegetables beautifully. A splash of lemon juice brightens everything, while optional coconut yogurt adds creaminess.

One drizzly afternoon, I was cleaning out my vegetable drawer and found a knobby piece of celeriac I'd forgotten about, along with a bunch of carrots that had seen better days. Rather than toss them, I decided to roast them with some spices I had lingering from a market trip, and that spontaneous kitchen moment turned into something I now make on purpose whenever I need comfort in a bowl. This soup became my go-to when I want something that tastes indulgent but leaves me feeling genuinely nourished, not weighed down.

I made this soup for my neighbor last winter when she'd mentioned feeling run down, and watching her face light up when she tasted it—that moment when someone stops mid-spoonful and just says, "wow"—reminded me why simple, honest food matters so much. She's requested it three times since, which probably says more than any review ever could.

Ingredients

  • Carrots (500g), peeled and diced: They're the sweetness backbone here, and dicing them into roughly the same size means they'll soften evenly without any hard bits hiding at the bottom of your bowl.
  • Celeriac (300g), peeled and diced: This knobbly root vegetable has an earthy, almost nutty flavor that elevates the entire soup—don't skip it or substitute lightly, as it's what makes this taste special.
  • Medium onion, chopped: The aromatic foundation that mellows beautifully as it softens, creating a sweet base layer for all those spices.
  • Garlic cloves (2), minced: Mince them finely so they dissolve into the broth rather than leaving harsh little chunks.
  • Red chilli (1), deseeded and finely chopped: Start with half if you're uncertain about heat levels—you can always add more, but you can't take it back.
  • Ground cumin (1 tsp): Brings warmth and a subtle earthiness that makes you want another spoonful.
  • Ground coriander (1 tsp): Adds a gentle citrusy note without being sharp or overpowering.
  • Ground turmeric (1/2 tsp): The golden color it gives isn't just beautiful—it's doing actual anti-inflammatory work in your bowl.
  • Smoked paprika (1/2 tsp): A whisper of smokiness that rounds everything out and makes the soup taste mysteriously deeper than its ingredient list suggests.
  • Vegetable stock (1 L): Homemade is best if you have it, but a good quality store-bought version works perfectly—just check the label if you're strict about gluten.
  • Olive oil (2 tbsp): Use something you actually like tasting, since you'll notice it here.
  • Lemon juice (from 1/2 lemon): Added at the end to brighten everything and prevent the soup from tasting heavy.
  • Salt and freshly ground black pepper: Season at the very end, tasting as you go, because stock saltiness varies wildly between brands.
  • Fresh coriander or parsley, chopped (optional): A pinch of green on top wakes up the whole bowl and makes it feel finished.
  • Coconut yogurt or dairy-free swirl (optional): A cooling dollop that contrasts beautifully with the spice and adds a creamy richness if you want it.

Instructions

Warm your pan and soften the aromatics:
Heat the olive oil in a large saucepan over medium heat, then add the chopped onion and minced garlic. You'll know they're ready when the kitchen smells sweet and the onion has turned translucent and soft, roughly 2 to 3 minutes of gentle stirring.
Bloom your spices:
Stir in the red chilli and all your ground spices—cumin, coriander, turmeric, and smoked paprika—and let them cook for just 1 minute. You'll notice the aroma shift to something warm and complex, which means the spice oils are activating.
Add your vegetables and coat them:
Tip in the diced carrots and celeriac, stirring everything together so the vegetables get coated in that fragrant, spiced oil. This step only takes a minute or two, but it's where the magic of flavor-building starts.
Simmer until tender:
Pour in your vegetable stock and bring the whole thing to a boil, then immediately lower the heat and let it simmer gently for 25 to 30 minutes. The vegetables are done when you can easily break a piece of carrot apart with a wooden spoon.
Blend into smoothness:
Once everything is tender, remove the pan from heat and grab an immersion blender—blend until the soup is completely smooth and creamy, which usually takes a minute or two of steady blending. If you're using a countertop blender instead, work in batches and be careful with hot liquid, letting it cool slightly first.
Finish with brightness:
Stir in the fresh lemon juice, then taste and season with salt and pepper as needed. This final acidity makes everything taste sharper and more alive, rather than flat and one-note.
Serve with intention:
Ladle the soup into bowls and top with a scatter of fresh coriander or parsley, and a generous swirl of coconut yogurt if you're using it. The cool, creamy topping against the warm, spiced soup creates a moment of genuine comfort.

The Story Behind Celeriac

Celeriac is one of those vegetables that looks intimidating—all knobby and armor-plated—but rewards your effort the moment you taste it. I avoided it for years, thinking it would taste aggressively like celery, until someone handed me a spoonful of celeriac soup and I realized it's actually mild, almost sweet, with this subtle earthiness that makes root vegetables sing. Now I seek it out specifically for soups like this one, where its quiet complexity becomes the backbone of the whole dish.

Spice Layering and Warmth

What makes this soup feel special rather than basic is the interplay of those five spices working together—none of them shouting, but each one adding a different note. The cumin brings grounding warmth, coriander adds a gentle brightness, turmeric gives earthiness and color, smoked paprika creates depth, and the fresh chilli provides that final gentle wake-up call. It's a lesson I learned from watching a friend who cooks intuitively: spices aren't meant to be loud individually, but to blend into something that makes people wonder what they're tasting.

Customization and Flexibility

One of the best things about this soup is how forgiving it is—if you can't find celeriac, parsnips or sweet potato work beautifully. If you're heat-sensitive, start with a quarter of the chilli and add more once you taste it. If you're making this for someone with specific dietary needs, it's naturally vegan, gluten-free, and dairy-free, which means one pot of soup feeds almost everyone at the table.

  • Blend it smooth for elegance, or leave it slightly chunky if you want more texture and substance.
  • Make a double batch and freeze it in portions—it reheats beautifully and tastes even better the next day as flavors settle and deepen.
  • Serve it hot on cold days, or let it cool slightly and serve it at room temperature in summer for a different but equally satisfying experience.

Recipe FAQs

Can I make this soup ahead of time?

Absolutely. This soup actually improves after a day or two in the fridge as the spices develop. Store in an airtight container for up to 4 days, or freeze for up to 3 months. Reheat gently on the hob, adding a splash of water if needed.

What can I use instead of celeriac?

Parsnip or sweet potato work beautifully as alternatives. Both bring a slightly different sweetness—parsnip is more earthy, while sweet potato adds creaminess. Use the same quantity and adjust cooking time if needed until tender.

How can I make this soup creamier without dairy?

Blend for longer to release the vegetables' natural starches, creating a silky texture. You can also add a splash of coconut milk or cashew cream before blending. The optional coconut yogurt swirl adds richness too.

Is this suitable for meal prep?

Perfectly suited. Portion into containers once cooled and refrigerate or freeze. The flavours deepen over time, making it ideal for prep. Avoid adding the coconut yogurt garnish until serving.

Can I adjust the spice level?

Certainly. Start with half the chilli for a milder version, or increase to two chillies for more heat. You can also add a pinch of cayenne or chilli powder when serving for an extra kick without altering the base.
