- Filling: 100 g (3.5 oz) cream cheese, softened , 1 tbsp fresh chives, finely chopped , 1 tbsp fresh parsley, finely chopped , 1 tsp lemon juice , Salt and pepper , to taste
- Vegetables: 1 small carrot, julienned , 1 2 small red bell pepper, julienned , 8 small cherry tomatoes (for garnish)
Instructions
- Step 1:
- In a small bowl, mix the cream cheese, chives, parsley, lemon juice, salt, and pepper until well combined.
- Step 2:
- Lay each spinach leaf flat on a clean surface.
- Step 3:
- Spread about 1 tablespoon of the herbed cheese mixture onto the center of each leaf.
- Step 4:
- Arrange a few carrot and bell pepper strips on top of the cheese.
- Step 5:
- Carefully roll up each spinach leaf, folding in the sides as you go to enclose the filling.
- Step 6:
- Secure each wrap with a toothpick and crown with a cherry tomato berry for a festive holly look.
- Step 7:
- Serve immediately or chill briefly before serving.
