A vibrant, healthy snack featuring spinach leaves filled with a creamy herbed cheese and crisp vegetables, inspired by the festive look of holly leaves.

This recipe was inspired by the festive look of holly leaves and has become a favorite easy snack in my home.

Ingredients

  • Greens: 8 large fresh spinach leaves (washed and dried)
  • Filling: 100 g (3.5 oz) cream cheese, softened , 1 tbsp fresh chives, finely chopped , 1 tbsp fresh parsley, finely chopped , 1 tsp lemon juice , Salt and pepper , to taste
  • Vegetables: 1 small carrot, julienned , 1 2 small red bell pepper, julienned , 8 small cherry tomatoes (for garnish)

Instructions

Step 1:
In a small bowl, mix the cream cheese, chives, parsley, lemon juice, salt, and pepper until well combined.
Step 2:
Lay each spinach leaf flat on a clean surface.
Step 3:
Spread about 1 tablespoon of the herbed cheese mixture onto the center of each leaf.
Step 4:
Arrange a few carrot and bell pepper strips on top of the cheese.
Step 5:
Carefully roll up each spinach leaf, folding in the sides as you go to enclose the filling.
Step 6:
Secure each wrap with a toothpick and crown with a cherry tomato berry for a festive holly look.
Step 7:
Serve immediately or chill briefly before serving.
